Recipe: Orange Lonza and Celery Root Salad

Looking for a way to add some razzle-dazzle to your usual salads? Lonza adds a protein-packed punch and just a touch of buttery salt.
Yield: 2 people
Ingredients:
100g Julienne Lonza-from 100g sliced pack
2 cup julienne celeriac root
1.5 cup julienne green apple
½ cup green onion, julienne
¼ cup chop parsley.
¼ cup crumbled Goat cheese
1 cup Cucumber medium dice
Orange segments- rindless, skinless
1 tbsp Olive oil
1 squeeze Lemon juice
½ tsp Salt
Fresh cracked pepper (optional)
What does Julienne mean? Thin, thin, thin! Cut them lengthwise into long and thin portions.
Method:
Combine lemon juice, celery root, cucumber, and salt for 30 mins before use- we do this to soften the celery root.
Add remaining ingredients, toss gently, taste, adjust seasoning, plate.
Crumble cheese on top, and fresh cracked pepper.
